4 alcachofas tiernas que sean grandes, 1/2 litro de fumet de pescado, 250 gramos de gambas frescas, 1 limon, vinagre, sal, 1 cebolla mediana, harina, aceite de oliva y reducción de jugo de escalibada.<a href="http://www.restaurantcalangel.com/">alcachofas rellenas de gambas</a><br />

este es un plato muy completo y muy sencillo de hacer.<br />
se tiene que hacer cuando estén en su punto de ternura y madurez.<br />
tomaremos las alcachofas y las pelaremos depositandolas mientras no las pongamos a cocer, en agua con harina, sal, y zumo de limón.<br />
las coceremos en agua acidulada(con sal y vinagre)durante unos quince minutos aproximadamente.<br />
prepararemos un relleno parecido al de la masa de croquetas pero con menos harina.<br />
esto lo haremos con cebolla, aceite de oliva, las gambas peladas y a trocitos, harina y fumet de pescado.<br />
le cortaremos un poco la base de la alcachofa para colocarla después de adorno.<br />
con un mazo de almirez le daremos holgura en su interior, y procederemos al relleno.<br />
con un poco de aceite de oliva, harina y el fumet correspondiente haremos una velouté de pescado para cubrir con el las alcachofas.<br />
